Chicken Fried Rice¶
Ingredients¶
- 2 Eggs
- 2 Raw Skinless CHicken Breasts
- 2 Cloves of Garlic - minced
- 1 Tbsp Butter
- 1 Tbsp Vegetable Oil
- 1 Onion - chopped
- 1 cup Frozen Mixed Vegetables
- 2 cups White Rice
- 4 Tbsp Soy Sauce
- 2 Tsp Ground Black Pepper
- Salt (to taste)
Instructions¶
- Melt butter in small skillet
- Scramble the eggs and cook in skillet until done, leaving egg flat (like making omlettes)
- Remove from heat and set aside
- Put some vegetable oil in another skillet and put on medium heat
- Add a clove of garlic to the oil when hot and allow to cook for 30 seconds
- Cut raw chicken into chunks and add to oil
- Cook chicken fully and remove from heat
- In a large skillet, heat some vegetable oil and add 1 clove of garlic
- Add mixed veggies and onions and cook until mostly soft
- Add chicken, rice, soy sauce, salt, and pepper to skillet and mix
- Shred egg and add to skillet (technically supposed to do this 2 min after last step but who cares)
- Cook for 5 - 10 minutes, stirring occasionally
Serves: 2 - 4
Notes¶
- Definitely needs a bit of ginger added with the soy sauce
- Recommend adding more soy sauce/ black pepper to recipe
