Cheesy Ham and Potato Soup ========================== Ingredients ----------- * 3 1/2 cups potatoes - peeled and diced * 1/3 cup celery - diced * 1/3 cup onion - diced * 1 cup carrot - chopped * 2 cups ham - diced * 3 1/4 cups chicken broth * salt to taste * 1 tsp pepper * 5 tbsp butter * 5 tbsp flour * 2 cups milk * 2 cups cheddar cheese - shredded Instructions ------------- #. Combine potatoes, celery, carrots, onion, ham, and broth in stockpot and bring to a boil. #. Reduce heat to medium and cook until potatoes are tender. #. Stir in salt and pepper. #. Meanwhile, in a separate saucepan, melt butter over medium-low heat. Whisk in flour and cook, stiring constantly until thick. #. Slowly stir in the milk, not allowing lumps to form. #. Turn up to medium heat. Continue to stir until thick. #. Add cheese and stir until melted. Stir cheese mixture into the stockpot and cook until heated through.
