Oven Baked Pork Chops with Potatoes =================================== Ingredients ----------- Rub: * 1 tsp worcestershire sauce * 2 tbsp ketchup * 1 tbsp soy sauce * 2 tbsp brown sugar * 1 tbsp olive oil * 1 clove garlic - minced * 1 tsp apple cider vinegar Chops: * 4 bone-in pork Chops * 1 1/2 lbs potatoes - chopped * 1 tbsp olive oil * salt and pepper to taste Instructions ------------- #. Preheat oven to 430F. #. Toss potatoes in oil, sprinkle with salt and pepper, and scatter on a baking tray. #. Place the tray in the oven for 15 minutes (to give them a head start). #. Meanwhile, mix the rub ingredients together in a small bowl. #. Slather the pork on both sides with the rub, reserving some of the rub for basting. #. Take the tray out of the oven and place the pork chops on the tray. #. Bake for 10 minutes, then spoon reserve rub over pork surface, and bake them a further 10 minutes. #. Take the tray out of the oven and turn on the broiler. #. Use a brush to get the juices off the tray and dab them on the pork. #. Pop the pork under the broiler for a couple of minutes, until pork is carmelised and golden. Serves: Original recipe yields 4 servings.
