Thai Pork and Peanut Curry ========================== Ingredients ----------- * 1 tbsp vegetable oil * 1 bunch green onion - sliced * 1 tsp of ground coriander, maybe more to taste * 1 lb pork tenderloin - sliced * 4 tbsp Thai red curry paste * 4 tbsp peanut butter * 2 tbsp brown sugar * 1 tbsp soy sauce * 1 2/3 cups coconut milk (400 ml) * 1/2 cup water * 1 pack/can baby corn * Juice of 1 lime * Rice to serve with (4 -5 servings) Instructions ------------- #. Heat oil in large saucepot. Add spring onions and coriander and cook for 1 min. #. Add the pork slices and cook for 5 minutes, until they start to brown. #. Stir in the curry paste and peanut butter. After 30 seconds, add the sugar, soy, coconut milk, and water. #. Mix well, put a lid on, and leave to simmer for 15 minutes, stirring occaasionally. #. Remove lid, add the baby corn, and increase the heat a little bit. Bubble for 3 minutes, until the corn is cooked and the sauce has thickened a little. #. Stir in the lime juice and serve with rice.
