Firecracker Chicken =================== Ingredients ----------- Sauce: * 1/3 cup buffalo sauce * 1 1/4 cup packed light brown sugar * 1 tbsp water * 2 tsp apple cider vinegar * 1/2 tsp salt * 1/4 tsp red pepper flakes Other: * 1/4 cup canola oil * 4 boneless skinless chicken breasts * salt and pepper * 1 cup cornstarch * 2 large eggs * Rice to serve with dish Instructions ------------- #. Cut the chicken breasts into bite-sized pieces and season with salt and pepper. #. In sparate bowls, place cornstarch and slightly beaten eggs. Dip chicken into cornstarch, then into egg mixture. #. Heat canola oil in a large skillet or wok over medium high heat. Cook chicken until browned. #. Meanwhile, in a medium sized mixing bowl, combine all of the sauce ingredients. Pour over browned chicken and cook until the sauce starts to thicken. #. Serve with rice.
