Chicken Fried Rice

Ingredients

  • 2 Eggs
  • 2 Raw Skinless CHicken Breasts
  • 2 Cloves of Garlic - minced
  • 1 Tbsp Butter
  • 1 Tbsp Vegetable Oil
  • 1 Onion - chopped
  • 1 cup Frozen Mixed Vegetables
  • 2 cups White Rice
  • 4 Tbsp Soy Sauce
  • 2 Tsp Ground Black Pepper
  • Salt (to taste)

Instructions

  1. Melt butter in small skillet
  2. Scramble the eggs and cook in skillet until done, leaving egg flat (like making omlettes)
  3. Remove from heat and set aside
  4. Put some vegetable oil in another skillet and put on medium heat
  5. Add a clove of garlic to the oil when hot and allow to cook for 30 seconds
  6. Cut raw chicken into chunks and add to oil
  7. Cook chicken fully and remove from heat
  8. In a large skillet, heat some vegetable oil and add 1 clove of garlic
  9. Add mixed veggies and onions and cook until mostly soft
  10. Add chicken, rice, soy sauce, salt, and pepper to skillet and mix
  11. Shred egg and add to skillet (technically supposed to do this 2 min after last step but who cares)
  12. Cook for 5 - 10 minutes, stirring occasionally

Serves: 2 - 4

Notes

  • Definitely needs a bit of ginger added with the soy sauce
  • Recommend adding more soy sauce/ black pepper to recipe
