One Skillet Creamy Lemon Chicken
Ingredients
- Half of a purple onion
- Bunch of asparagus, julienned
- Two chicken breasts, sliced thinly lengthwise
- ½ cup of chicken broth
- ¼ cup of lemon juice
- 1 tsp. of Red Pepper Flakes
- 1/2 to 1 Tbsp. of minced Garlic (depending on preference)
- 3 Tbsp. of olive oil, divided.
- 1 Tbsp. of butter
- ¼ cup of heavy whipping cream
- Fresh parsley, to taste.
Instructions
- Mix chicken broth, lemon juice and red pepper flakes and garlic in a small bowl. Set aside.
- In a heavy saucepan, sauté bunch of julienned asparagus in 1 Tbsp. of olive oil.
Remove asparagus whenal dente.
- Add 1 more Tbsp. of olive oil and two chicken breasts, sliced thinly, lengthwise. Remove
chicken breasts once cooked through.
- Add last Tbsp. of olive oil and the onion. Sauté until translucent.
- Add chicken broth mixture and simmer a few minutes until reduced.
- Add butter and whipping cream.
- Add back chicken and asparagus to warm. Plate chicken, then asparagus. Top with
sauce and fresh parsley, to taste.
