One Skillet Creamy Lemon Chicken

Ingredients

  • Half of a purple onion
  • Bunch of asparagus, julienned
  • Two chicken breasts, sliced thinly lengthwise
  • ½ cup of chicken broth
  • ¼ cup of lemon juice
  • 1 tsp. of Red Pepper Flakes
  • 1/2 to 1 Tbsp. of minced Garlic (depending on preference)
  • 3 Tbsp. of olive oil, divided.
  • 1 Tbsp. of butter
  • ¼ cup of heavy whipping cream
  • Fresh parsley, to taste.

Instructions

  1. Mix chicken broth, lemon juice and red pepper flakes and garlic in a small bowl. Set aside.
  2. In a heavy saucepan, sauté bunch of julienned asparagus in 1 Tbsp. of olive oil. Remove asparagus whenal dente.
  3. Add 1 more Tbsp. of olive oil and two chicken breasts, sliced thinly, lengthwise. Remove chicken breasts once cooked through.
  4. Add last Tbsp. of olive oil and the onion. Sauté until translucent.
  5. Add chicken broth mixture and simmer a few minutes until reduced.
  6. Add butter and whipping cream.
  7. Add back chicken and asparagus to warm. Plate chicken, then asparagus. Top with sauce and fresh parsley, to taste.
