Fresh Pasta¶
Ingredients¶
- 4 - 5 Cups red and yellow ripe Tomatoes
- 3 Garlic Cloves - peeled and minced
- 1/4 Cup minced fresh Basil
- 2 Tbsp minced fresh Oregano
- 2 tsp salt
- 7 Tbsp Olive Oil
- 1/2 lb Fontina Cheese - 1 inch cubes
- Juice of 1 Lemon
- 1 1/2 lbs of Pasta
- Pepper to taste
Instructions¶
- In a bowl, combine the chopped tomatoes and their juice with the garlic, basil, oregano, salt, and 6 Tbsp of olive oil
- Mix well, then add cheese and cover/marinate at room temp for at least 1 hour
- Cook pasta according to package, drain, and return to pot
- Add the remaining Tbsp of olive oil, then season with salt and pepper.
- After the hour has passed, add the lemon juice and pepper to the sauce.
- Fold sauce with pasta and toss. Serve immediately.
Serves: 4 - 6
Notes¶
- If not using fresh oregano, use like 1/2 Tbsp of dried oregano
