Crispy Cajun Shrimp Fettuccine

Ingredients

  • 8 oz Fettuccine Pasta
  • 1 lb Shrimp (deshelled and deveined)
  • 1 tablespoon Cajun Seasoning
  • 2 tablespoons All-Purpose fFlour
  • 2 tablespoons Butter
  • 1 tablespoon Olive Oil
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese (grated)
  • 1 tablespoon fresh Parsley (chopped)
  • salt and pepper to taste

Instructions

  1. Sprinkle the shrimp with the cajun seasoning and toss well.
  2. Drizzle the flour over the shrimp and toss in a bowl to make sure each shrimp is covered.
  3. Boil water and cook fettuccine noodles.
  4. In a deep skillet, add butter and olive oil, then heat over high heat.
  5. Add shrimp to the skillet and cook on each side for about 2 minutes, until crisp.
  6. Remove shrimp from the skillet and set aside.
  7. In the same skillet, add chicken broth and heavy cream.
  8. Season with additional cajun seasoning and salt/pepper to taste.
  9. Bring to a boil then add the Parmesan cheese and whisk.
  10. Add fettuccine and shrimp back to skillet and toss.
  11. Garnish with parsley and additional Parmesan and serve.

Serves: Makes 4 servings

Notes

  • Be careful with the sodium content.
  • Can get thick fast. Be careful.
