Thai Pork and Peanut Curry

Ingredients

  • 1 tbsp vegetable oil
  • 1 bunch green onion - sliced
  • 1 tsp of ground coriander, maybe more to taste
  • 1 lb pork tenderloin - sliced
  • 4 tbsp Thai red curry paste
  • 4 tbsp peanut butter
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 2/3 cups coconut milk (400 ml)
  • 1/2 cup water
  • 1 pack/can baby corn
  • Juice of 1 lime
  • Rice to serve with (4 -5 servings)

Instructions

  1. Heat oil in large saucepot. Add spring onions and coriander and cook for 1 min.
  2. Add the pork slices and cook for 5 minutes, until they start to brown.
  3. Stir in the curry paste and peanut butter. After 30 seconds, add the sugar, soy, coconut milk, and water.
  4. Mix well, put a lid on, and leave to simmer for 15 minutes, stirring occaasionally.
  5. Remove lid, add the baby corn, and increase the heat a little bit. Bubble for 3 minutes, until the corn is cooked and the sauce has thickened a little.
  6. Stir in the lime juice and serve with rice.

Serves: Original recipe yields 6 servings

Notes

  • Add more soy sauce, maybe another tablespoon or two
  • Add another tablespoon brown sugar (The recipe has been updated to reflect this)
  • Use less lime, maybe half, garnish with other half?
