Thai Pork and Peanut Curry¶
Ingredients¶
- 1 tbsp vegetable oil
- 1 bunch green onion - sliced
- 1 tsp of ground coriander, maybe more to taste
- 1 lb pork tenderloin - sliced
- 4 tbsp Thai red curry paste
- 4 tbsp peanut butter
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1 2/3 cups coconut milk (400 ml)
- 1/2 cup water
- 1 pack/can baby corn
- Juice of 1 lime
- Rice to serve with (4 -5 servings)
Instructions¶
- Heat oil in large saucepot. Add spring onions and coriander and cook for 1 min.
- Add the pork slices and cook for 5 minutes, until they start to brown.
- Stir in the curry paste and peanut butter. After 30 seconds, add the sugar, soy, coconut milk, and water.
- Mix well, put a lid on, and leave to simmer for 15 minutes, stirring occaasionally.
- Remove lid, add the baby corn, and increase the heat a little bit. Bubble for 3 minutes, until the corn is cooked and the sauce has thickened a little.
- Stir in the lime juice and serve with rice.
Serves: Original recipe yields 6 servings
Notes¶
- Add more soy sauce, maybe another tablespoon or two
- Add another tablespoon brown sugar (The recipe has been updated to reflect this)
- Use less lime, maybe half, garnish with other half?
