Cheesy Ham and Potato Soup¶
Ingredients¶
- 3 1/2 cups potatoes - peeled and diced
- 1/3 cup celery - diced
- 1/3 cup onion - diced
- 1 cup carrot - chopped
- 2 cups ham - diced
- 3 1/4 cups chicken broth
- salt to taste
- 1 tsp pepper
- 5 tbsp butter
- 5 tbsp flour
- 2 cups milk
- 2 cups cheddar cheese - shredded
Instructions¶
- Combine potatoes, celery, carrots, onion, ham, and broth in stockpot and bring to a boil.
- Reduce heat to medium and cook until potatoes are tender.
- Stir in salt and pepper.
- Meanwhile, in a separate saucepan, melt butter over medium-low heat. Whisk in flour and cook, stiring constantly until thick.
- Slowly stir in the milk, not allowing lumps to form.
- Turn up to medium heat. Continue to stir until thick.
- Add cheese and stir until melted. Stir cheese mixture into the stockpot and cook until heated through.
Serves: Original recipe yields 8 servings
Notes¶
- Thickens as it cools
- Goes well with some bread rolls
