Cheesy Ham and Potato Soup

Ingredients

  • 3 1/2 cups potatoes - peeled and diced
  • 1/3 cup celery - diced
  • 1/3 cup onion - diced
  • 1 cup carrot - chopped
  • 2 cups ham - diced
  • 3 1/4 cups chicken broth
  • salt to taste
  • 1 tsp pepper
  • 5 tbsp butter
  • 5 tbsp flour
  • 2 cups milk
  • 2 cups cheddar cheese - shredded

Instructions

  1. Combine potatoes, celery, carrots, onion, ham, and broth in stockpot and bring to a boil.
  2. Reduce heat to medium and cook until potatoes are tender.
  3. Stir in salt and pepper.
  4. Meanwhile, in a separate saucepan, melt butter over medium-low heat. Whisk in flour and cook, stiring constantly until thick.
  5. Slowly stir in the milk, not allowing lumps to form.
  6. Turn up to medium heat. Continue to stir until thick.
  7. Add cheese and stir until melted. Stir cheese mixture into the stockpot and cook until heated through.

Serves: Original recipe yields 8 servings

Notes

  • Thickens as it cools
  • Goes well with some bread rolls
