Oven Baked Pork Chops with Potatoes

Ingredients

Rub:
  • 1 tsp worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp olive oil
  • 1 clove garlic - minced
  • 1 tsp apple cider vinegar
Chops:
  • 4 bone-in pork Chops
  • 1 1/2 lbs potatoes - chopped
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 430F.
  2. Toss potatoes in oil, sprinkle with salt and pepper, and scatter on a baking tray.
  3. Place the tray in the oven for 15 minutes (to give them a head start).
  4. Meanwhile, mix the rub ingredients together in a small bowl.
  5. Slather the pork on both sides with the rub, reserving some of the rub for basting.
  6. Take the tray out of the oven and place the pork chops on the tray.
  7. Bake for 10 minutes, then spoon reserve rub over pork surface, and bake them a further 10 minutes.
  8. Take the tray out of the oven and turn on the broiler.
  9. Use a brush to get the juices off the tray and dab them on the pork.
  10. Pop the pork under the broiler for a couple of minutes, until pork is carmelised and golden.
