Oven Baked Pork Chops with Potatoes¶
Ingredients¶
- Rub:
- 1 tsp worcestershire sauce
- 2 tbsp ketchup
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp olive oil
- 1 clove garlic - minced
- 1 tsp apple cider vinegar
- Chops:
- 4 bone-in pork Chops
- 1 1/2 lbs potatoes - chopped
- 1 tbsp olive oil
- salt and pepper to taste
Instructions¶
- Preheat oven to 430F.
- Toss potatoes in oil, sprinkle with salt and pepper, and scatter on a baking tray.
- Place the tray in the oven for 15 minutes (to give them a head start).
- Meanwhile, mix the rub ingredients together in a small bowl.
- Slather the pork on both sides with the rub, reserving some of the rub for basting.
- Take the tray out of the oven and place the pork chops on the tray.
- Bake for 10 minutes, then spoon reserve rub over pork surface, and bake them a further 10 minutes.
- Take the tray out of the oven and turn on the broiler.
- Use a brush to get the juices off the tray and dab them on the pork.
- Pop the pork under the broiler for a couple of minutes, until pork is carmelised and golden.
