Fisherman’s Stew¶
Ingredients¶
- 3/4 teaspoon Salt
- 2 pounds Fish
- 1/2 cup Olive Oil
- 2 large Onions, sliced
- 2 1/3 cups Tomatoes (20oz or so)
- 1 teaspoon Crushed Red Pepper
- 1 1/2 cup water
- 1 can (8oz) of tomato sauce
- Salt and Pepper to taste
- French/Italian Bread
Instructions¶
- Make a sauce by browning the onions on medium/medium-low in olive oil in a deep pot (Takes about 30 minutes).
- Add tomatoes, tomato sauce, crushed red pepper, salt, pepper, and water.
- Allow to simmer for 30 minutes.
- Add the fish and continue to simmer until fish is cooked.
- Serve in deep plates over French/Italian bread
Serves: Makes 4 servings
Notes¶
- Whole small fish of any type can be used. (Cod, Haddock, Tilapia)
- Have heard Catfish works excellently. Have not tried yet.
- Original Recipe calls for 1/2 cup white wine, 1/2 cup parsley.
- Original Recipe recommends salting the fish for a few hours.
- Use a little white sugar to round out the flavor of the stew
