Fisherman’s Stew

Ingredients

  • 3/4 teaspoon Salt
  • 2 pounds Fish
  • 1/2 cup Olive Oil
  • 2 large Onions, sliced
  • 2 1/3 cups Tomatoes (20oz or so)
  • 1 teaspoon Crushed Red Pepper
  • 1 1/2 cup water
  • 1 can (8oz) of tomato sauce
  • Salt and Pepper to taste
  • French/Italian Bread

Instructions

  1. Make a sauce by browning the onions on medium/medium-low in olive oil in a deep pot (Takes about 30 minutes).
  2. Add tomatoes, tomato sauce, crushed red pepper, salt, pepper, and water.
  3. Allow to simmer for 30 minutes.
  4. Add the fish and continue to simmer until fish is cooked.
  5. Serve in deep plates over French/Italian bread

Serves: Makes 4 servings

Notes

  • Whole small fish of any type can be used. (Cod, Haddock, Tilapia)
  • Have heard Catfish works excellently. Have not tried yet.
  • Original Recipe calls for 1/2 cup white wine, 1/2 cup parsley.
  • Original Recipe recommends salting the fish for a few hours.
  • Use a little white sugar to round out the flavor of the stew
